Chef Kenichi ‘Ken’ Tajima marvels as executive chef of Tastings NYC for the past 10 years. Born in Tokyo, Japan, Ken attended the prestigious Seikei private school but discovered the joys and cooking using seasonal ingredients as nurtured by his mother. Ken attended French culinary arts. At Tsuji Cooking School in Lyon France & Osaka Japan l and gained valuable experience in France and Japan. In France, Ken cooked at Michelin Star dining in Chalon sur Saone, Annecy, Lyon and Paris. After moving to NYC, Ken worked alongside Executive Chef Philippe Bertineau and Pastry Chef, Francois Payard as Chef de Cuisine and then Executive Catering Chef for Tastings by Payard before he opened Mountain Bird in 2013.
