Spicy Shrimp Primavera

Ingredients:

  • 1 Box Barilla® Rigatoni

  • 4 tablespoons olive oil, divided

  • 1-pound large shrimp, peeled except tails and deveined

  • 1 ½ tablespoons jalapeno, minced

  • Salt for seasoning

  • 6 garlic cloves, thinly sliced, divided

  • 2 large shallots, roughly chopped

  • 1 red or yellow or orange bell pepper, cut into medium dice

  • ¾ cup dry white wine

  • 3 tablespoons butter, divided

  • 1 ½ cups tri-colored cherry tomatoes

  • 2 cups collard greens, chiffonade

  • 1 teaspoon red pepper flakes

  • ½ cup Parmigiano cheese, grated

Instructions:

  1. Bring a large pot of salted water to a boil and add the rigatoni. Cook according to box instructions. Reserve about 1 cup of pasta water.

  2. In the meantime, turn your large nonstick skillet on medium high heat and drizzle the bottom with 2 tablespoons of olive oil.

  3. In a medium bowl combine the shrimp, jalapeno, 2 tablespoons of olive oil, and a sprinkle of salt. Once the pan is hot add in the half of the garlic, stir until lightly yellow. Then, add mixture from bowl and cook shrimp until just pink in color. Shrimp cook quickly, so do not let them overcook. Remove to a plate and set aside. Some of the jalapeno bits may be left behind in the pan and that is ok.

  4. Add in the shallots and stir, turning the heat up to high. After 1-2 minutes, they will start to turn golden in color. Turn down the heat to medium high and add the remaining garlic and stir to combine.

  5. Once the garlic is lightly golden add in the bell pepper. Season the mixture with a little bit of salt and stir. Cook until the bell pepper is soft.

  6. Turn the heat up to high again and add the white wine, simmer until reduced by half.

  7. Turn the heat down to medium-low and then add tomatoes. Stir in shrimp mixture.

  8. Add in collard greens topped by hot pasta, ½ cup reserved pasta water. Gently mix everything to combine and bring up to a simmer. The sauce will continue to thicken and coat the pasta nicely.

  9. Stir in butter, red pepper flakes, and mix to combine. Remove from heat and top with parmesan cheese.
